A good portrait (50mm 1.8), a good walk-around (many in this category), and a good tele-zoom (70-200 or 70-300) would pretty much cover the gamet. Then you can concentrate on some more specialized lenses like wide angle (10-22mm or 17-40mm), fast lenses (24-70mm), and primary lenses (many in this category too)
Personally there is really no "must have lens" because different lens will cover different subject and it all depends on what you plan to shot. The only "must have lens" that I would say would be a nice prime 50mm lens. I don't follow up on Canon lens but in the Pentax world, the most popular must have lens is the Pentax FA 50mm f/1.4 which sells for dirt cheap right now. I know canon has the 50mm f/1.4 which sells for about $300 and the cheaper version the f/1.8 which sells for about $80. I don't know if there is any difference in picture quality between the two.
Other than a prime lens, I would get a good walk-around lens. The stock lens should be a decent walk-around lens if you are still learning how to use your camera. You can get a decent walk-around lens from 18mm-200mm that will cover almost all of your needs.

BTW REV im looking for a 18-200mm lens by sony. The thing I like about it is its versatile. Gives you wide angle and zooms about as good as you would like. Over 200mm , your doing some very up close stuff , like sports (drifting , football games etc) or zoo animals sitting way back.
I tried to find the lowest back and farthest forward in terms of numbers for my price range. But if you want to swap around some lenses youll usually find the X-100MM and like a X-200/300 or 400 for pretty cheap with good quality.
The lens that came on there Im sure is fine for a bit , just get used to it and really see whats lacking from it so when you goto buy your lens you truly get to see what sort of need for a lens you will have for your tastes and kind of shooting.

I'm not sure if the 70-200mm f/2.8 L Image Stabilizer will fit onto a rebel but it's a damn good all around lens. I have used it for all of my portraitures I've shot.

it fits .. just expensive as heck. awesome lens though
that lens will probably fall under the "must have lens if you have money" category
