again, another VERY easy, but very good recepie-
Ingredients:
4 Chicken breasts
4 Portabella Mushrooms
1/2 cup Flour
1 tbs Ground Black Pepper
2 tbs cayenne
2 tbs garlic salt
1/2 lb sliced mushrooms
1/2 cup butter
4 tbs extra virgin olive oil
Sweet Marsala Wine
1/2 package of pasta of choice. (I usually go w/ short fettuccine)
Prep:
1. Prepare a pot of boiling water for pasta.
2. pour flour, pepper, garlic salt and cayenne into a mixing bowl and mix together well
3. if chicken breasts are really thick, slice them in half so they are a little thinner. you may choose to pound them thinner if you like
4. on low heat, melt 1/2 cup of butter w/ 2 tbs of olive oil in a large sauce pan.
5. douse chicken in the flour mixture. enough to cover both sides.
6. Water should be boiling by now, so cook pasta w/ 2 tbs of olive oil in the water.
7. once the butter is completely melted, turn heat to high and put chicken into pan. cook one side for two minutes, then turn chicken over.
8. put sliced mushrooms in w/ chicken, then pour in enough wine to cover all the ingredients, and finally top off w/ the portabella mushrooms. cover saucepan and let simmer for 10 minutes
9. pasta should be ready a little bit before the chicken. remove pot from heat and drain water. Mix pasta w/ the chicken in the final minutes of cook time to add a little flavor to the pasta.
10. remove all from heat and plate as follows: portabella mushroom, small bed of pasta, chicken, then sliced mushrooms. garnish w/ parsley and/or sweet sun-dried tomatoes if you want to add a little color
Wine Pairing: beringer white zin will be good for a sweet wine, any merlot if you want a red wine.
