Sauteed Veggies and Beef in Chili Coconut Sauce - SPICY!~

so in my hunger last night, i kinda just threw these ingredients together to make one awesome dinner and plenty of leftovers

ingredients:
1/2 clove garlic (chopped)
1 sliced (like half onion rings) vidalia onion (aka sweet onion)
2 sliced red bell peppers
1/2lb string beans
1/2lb bean sprouts
1lb ground beef
1 can coconut milk
chili paste to taste
6 tbs ground black pepper
2 tbs salt
4 tbs peanut oil
6 tbs sweet soy sauce

what to do:
put oil in a large pan. and turn heat on high.
brown the garlic and onions.
add ground beef and cook for 2 minutes, stirring it around and breaking up any large chunks. add 3tbs of black pepper to the meat while stirring.
add bell peppers and string beans and cook until ground beef is no longer red. keep stirring mixture around to be sure everything cooks. add rest of black pepper and salt.
add sweet soy sauce and stir in mixture. continue to cook until green beans become dark green
add the whole can of coconut milk and stir in. all the thick stuff will thin out under heat...so keep mixing.
add chili paste to desired spiciness. be careful though since the coconut milk and chili paste reduces and spiciness will increase when you're done cooking.
cover the pan and let the veggies and meat cook in the coconut milk and chili sauce for 5 minutes.
take cover off and add bean sprouts. mix in bean sprouts and cook for 2 minutes.

serve w/ rice and an ice cold thai beer
