sweet is an unknown quantity at this point
both good motors but the one with more displacement will yield more HP/TQ. so go with the B18C1 even if it's more expensive than the B16A.

the B18B wasn't one of the original choices but it's still a good motor for the $$. i personally like the B18C1 though it's normally the most expensive of the 3 motors.

any of the 3 motors with the right N2O injection system will be fast, especially in the Civic coupe. all depends on your budget.
