Will 17x7.5 wheels rub on my car???

I have an 00 si with eibach sportlines (1.8 in drop). I am about to buy some 17x7.5 ssr competitions but am worried about them rubbing. Will they rub excessively and if they do how can i remedy that? Should i get new shocks and coilovers?

205/40-17 tiresize. Can someone give me a clear description of what off-set is and what off set is the best for my situation.

offset is the distance from the center of the wheel to the mounting surface...basically determines how far in or out the combo will fit into the wheel well. so what is the wheel's offset???
