With the old 302 it would run around 210 with a 160 stat if it was above 80 outside, and if you were beating on it then you would have to let it cool down after wards but I think I have that problem fixed now.

I don't really beat on her, motor's still in the break-in period (maybe 200 miles on it). Take her out, light em up in 2nd a couple times, make a gradual run up to about 100 (speedo stops at 85), then slow down, maybe whip a quick donut or two... then she overheats.
I was looking at BeCool radiators and F-A-L Fans, but their expensive.

What temp stat do you have in it? whats your timing at? You also said you have a flex fan? If so that would be the first thing I would replace
No clue, I was told it was all stock cooling system. Except for the serpentine system from an 85 5.0 H.O., cuz the motor was originally v-drive (I think? ) I'm not sure where the timing is at, it's not terrible, only a few degrees, but with no exhaust, and running a lil rich, it seems worse then it is. Yeah it came with a shitty F-A-L crank fan, which is better then the stock crank fan, but still sucks.

If its a flex( the fins that straiten out when you rev the car) then rip that off there, also if that water pump is from a v belt set up and you put a serpintine on it, it might be spining it the wrong way, so you might want to look at it and think about that for a min. As far as your carb problems, I can help you a little but I hate edelbrock carbs, they can be a bitch to set up because they don't have a power valve like other carbs they have a damn needle valve that pisses me off everytime I fuck with one. With that cam and your carb not being set up right then your timing is probably advanced more than you think it is if your playing it by ear.

I know it's a Flex-A-Lite Fan, but I'm not sure if it flexes and straightens out, I've grabbed the blades with my hand and tried to twist them, and they didn't move, never really thought about it.
The water pump and other accesories all came of the 85 302 H.O, from what I was told, BUT I know the guy I bought the car from wasn't all that mechanically inclined, and everytime I try to get a hold of the guy that swapped the motor in (owner of a auto repair shop, he was building the car to keep it, so I would like to THINK he did it right) it ends up being a month long process of phone tag since he works fucked up hours and goes out of town quite often for Mud Drags and shit (he's got an Escort EXP on a S-10 Blazer frame and 35's )
I absolutely despise the Edelbrock Carb, IMO it's the biggest peice of shit ever made, and if I had the $$ to replace it, I'd smash the fucker with a sledge and get me a nice Demon Carb. But being 18, and in school, funds are tight at the moment, and will be for about a month until I start working more.
I think the big problem that makes it run like shit is the lack of exhaust (no shit, eh?) It ran great when it had exhaust on it (chopped it off to put headers in, just to find out they didn't fucking fit) with an occasional burp here and there when it was warming up.
But, I'm bringing her to school this week and welding an exhaust up, so hopefully that will help the driveability/idle/running problem enough so I can dial her in. I just didn't see the point of having some1 come over and fuck with it with no exhaust.
So, sometime later next week, I'll hit you up, if we can't figure it out.

Edelbrocks are good carbs if you know how to adjust them because there is no power valve to blow if it coughs threw the carb. I would use a 650 holley for your set up, maybe a 750 but that might be a little to big. If that fan is a flex fan then it will probably be steel with aluminum blades, does it have a shroud?
