different power delivery. Vtwins are more torquey and inline 4's make a ton of power high up in the rev range. Theres a huge difference between the vtwin used on the rc51 and on say a harley though. The rc51 employs a very high performance type.

02-06 versions of the RC51 put down about 120 rwhp.
06+ versions of the GSXR-1000 put down about 165 rwhp.
GSXR weighs considerably less.
honda stopped producing the '51 in 05 with 06 year models, and there is nothing different from the 02 version from the 06 version. the 00-01 versions are referred to as SP1, and 02+ is SP2.
the GSXR is going to be far more advanced in technology.
back in 2002, the 51 was the first production non-limited edition bike to break the 120 rwhp mark for V-twin sport motorcycles.

RC 51 handles better b/c V-twin occupies less space and the way its mounted in the frame compared to a v-4 or a I-4 set up. RC 51 was once herald as the best handling crotch rocket for numerous years

An excellent point. They're also easier to tune and have better heat dissipation properties.
I have an 82 Virago XV750 - vtwin, ~40-50hp, 8500rpm redline, far from fast but a dream as far as maintenance goes.
I also have a '93 GSXR 600w - 4cyl, ~108hp (factory specs), 1300rpm redline (i think anyway) and lighter than the virago by about 120lbs, but not NEARLY as fun to tune. trying to sync those carbs is a fuggin' nightmare, the chain needs to be adjusted regularly (virago is shaft drive, so it's virtually maintenance-free), and all the parts are expensive for how common they are.
There are tons of differences between the vtwin and 4cyl, it's not quite as simple as comparing double the cylinders. There are vtwins out there (like the rc51) which will race the pants off my measly gsxr and there are vtwins that'll get the pants raced off of them by the virago (granted, they're few and far between, but you get the point).
Generally, the vtwin is considered to have more "usable" power than the 4cyl bikes, but for all-out balls-to-the-wall speed, the 4cyl takes it. I don't really care, as long as it has two wheels and I don't have to pedal.
