My AFR setup consistently does not work in the rain, or soon after a rain storm. I get a generic error code on my gauge, and then it just goes into Demo mode flashing its colors, and counting through all the digits. I don't get a sensor malfunction error code, or gauge error code.

Does the AFR take humidity into account? Maybe there is some water or damp spot somewhere around the sensor or wiring that causes it to goof up?
Well that would be the obvious guess, but the wires are all very well insulated, and the entire computer mounted to my firewall is actually guaranteed to function after being run over, frozen in a block of ice, and dropped off a roof lol (It's part of the selling point haha).
The sensor is welded in by a master welder, with no leaks either....and I wouldn't expect condensation to build up in exhaust pipe while the car is running...?

Mine makes a lot of condensation in the exhaust when its running, so maybe that is it?

Maybe you have a wire exposed somewhere? That would be the only thing I could see shorting it out while it's wet. I know you say it's insulated, but get down there and check again just to make sure. Heat could have melted a hole in the wrap or any thing like that....
