Did you consider yet that your coilovers may NOT be adjusted Exactly EVENLY?

It is possible that the ONE corner that you have the trouble with is just a hint lower than the others... Are you running aftermarket shocks? As well, if you have stock shocks, you may have toasted the One corner First and thus are having troubles there.

You could also get the car corner weighted with YOU inside it. Then you will have the optimal setting AND know for sure IF it is rubbing and decide how or if you have to fix it?

As for the plastic, why not see if the springs are even FIRST, then Maybe remove the plastic or even have the fenders rolled professionally if you are THAT low and That is really the issue and NOT a mechanical dilemma!

If you are that low, you probably toasted one of your shocks. That could give you a metal squeaking noise. Make sure you have all the heights the same, as Grey said. Also, can you pinpoint where exactly the tire is rubbing? Is it for sure on the outside of the wheel well at the fender? If you are rubbing on the plastic consider raising the height of your car up. Lower isn't better when it comes to handling.
