I was going to get the EVGA 680i A1 MB but after reading about a crap load of people having issues with them I have decided not to get one, what should I get?
Well don't bother with a Q6700...just get a Q6600 and overclock it.
And what resolution will you be gaming at? 2 cards may be overkill and really limits the motherboards you can choose. Selling off 1 and putting the money toward other components is probably a good idea.

I really don’t want to overclock plus I am getting the 6700 for $30 more then I can get a 6600
What non SLI motherboard would you recommend?

Yeah the Striker was on my list but I was having issues finding one, I cant go to Newegg cos they don’t ship here. Tiger direct or Amazon is where I have to buy and then sometime Amazon won’t ship some stuff here. Tiger direct does not sell it and Amazon wont ship it here, so I’m shit out of luck for that board.
On a side note it seem all the issues people are having with the EVGA 680i A1 are with the 45nm chips so I may go ahead and get it.

DO NOT get that mobo, that's what i had last and it's roasty toasty in the trash and i got frustrated with "overclocking" motherboards so i got a cheap gigabyte one and it runs fine, but i'm at stock speeds of course. as far as the 8800's in sli, this is just a suggestion of course, take it with a grain of salt, but i think it would be wise to wait for 9x series card to drop, and sli two of the 9xGT series cards. why you might ask? two 8800gtx's are still really expensive right now, and two in sli still only produce 40ish FPS in crysis with it turned up, might as well wait till next gen drops if you can hold out, that or get evga so you can take advantage of their step-up program
