I want to keep my car low when I get my gunmetal 15's. I'm at about 2.75" right now on my Ground Controls and OEM 14" wheels. I am looking to take it down maybe another 1/4" with the 15's for a really low / nice look.

So, the higher the offset the lower you can go w/o rubbing the fenders correct?

I may even roll the fenders, but if I can get a high offset to avoid rolling the fenders that would be great!!!

thats right, but with too much offset ive seen people hit their calipers with their rims or even their inner fender walls. but if you go with somethin like +45 offset u will be able to drop a ton.

The higher the offset, the more your wheels will be set in.. So if you tuck them in too far, you're gonna risk rubbing on the inside, instead of rubbing the outside on your fenders.. So you have to make a compromise somewhere.. :)
