Not to be redundant, as I've posted around this question before but I'm still not sure. I bought a Eclipse 9122 Titanium. It runs around 750 Watts continuous. I have an Alpine M501 which is 500X1 at 2 ohms. Now for the part I'm not clear on. The Eclipse is dual 3.1 Ohm voice coils. Run on this amp in parallel what power does my amp puch. over 500 watts but how much over?

The dual voice coils in parallel will give you a resistance around 1.55 ohms.
That should give you around 650 watts, but only if the amp can handle the additional current. If not, all you'll get is the smell of burning circuits.
I honestly don't have any idea what the lowest resistance that amp can handle, but I'd be wary of anything under 2 ohms.
