I got 2 questions:

I want to flush my entire brake fluid and replace it with new one. do i just open all the bleeding valve and press on the brake pedel until nothing come out. or there another way.

2nd. I want to replace my rubber brake line with a ss brake line. which brand is better, goodridge or earl and how difficult is it to do this?

For the first question:
Do it like your bleeding the brakes, have one guy step on the pedal and one guy open the bleeder valve. Instead of doin it still the air is out (if theres any) do it till new fluid comes out. If you want to go in detail just ask I shall.

easiest way to change brake lines is to put a brake pedal depressor.... just ot hold the brake pedal....crack open the bleeder valve to let out the brake fluid.... then take out your rubber brake lines.... and replace....then close the bleeder valve pump the brakes hold it and bleed the brakes system... thats how i usually do it when i neeed to bleed the brakes.... :)
